How far ahead can you bake the sweet potatoes? Thank you!

SpomerE

Can this be made ahead of time?

Bea

Why all the sugar? There is sugar in the orange juice and sweet potatoes are already sweet. I am going to make this without added sugar in the main part of the dish and half the amount of sugar recommended for the topping. Has anyone tried that yet?

Emily Weinstein

Hello all, apologies for the confusion about the eggs!

An earlier version of this recipe did in fact include eggs. We have since retested and revised it to make it creamier, omitting the eggs, increasing the melted butter and adding milk or cream. You'll see the corrected recipe here. We hope you'll find it even more delicious.

Comment:Leave out the sugarJuice the orange instead of using store-bought juice.Substitute coconut milk for the heavy creamFor the topping:-Omit sugar- Use some toasted coconut with the pecans.

Rosalind Hanckel

Yes, it can be made in advance... Just be careful reheating it so you don't burn the topping. Or better yet, make it in advance, but don't bake it with the topping until the last minute.

Barbara

I added orange zest, and a couple of tablespoons of bourbon and a few shakes of orange bitters. Unbelievably luscious!

The size of the “casserole dish” needs to be stated!!! Is it a 9 x 13 inch casserole dish, or like the photo in the recipe indicates closer to 9 x 5 inch dish? VERY FRUSTRATING!!!

Loren

Cooked sweet potatoes in Instant Pot on High Pressure for 15 minutes. They were perfect!

I made this a day ahead (casserole and its topping separately refrigerated) using the juice of half a Cara Cara orange. The next day, after brought to room temperature, I reheated it for 30 mins. at 350. It was light and creamy; accompanied an Easter ham; everyone loved it (especially the men).

Bea, how did your family like your reduced sugar version? Did you make any other changes? I usually put a little cinnamon & nutmeg in mine along with a shot of bourbon. The tiny amount of alcohol cooks off, so no problem there, and I like its flavor.

Debbie

At our house we try to make everyone happy...for the topping angle stripes of mini marshmallows and the pecan mixture alternately (idea from Southern Living.) It looks pretty and all get their favorite topping.

Marian Burros

One day.

EJL

Please someone respond to how far in advance this can be prepared.

Tessa

Looks to me like a 7" x 11", but you could use 9x9 or a round dish 10" across for about the same area. I do a similar praline sweet potato casserole -- which is delicious with the combination of creamy mashed sweet potatoes and crunchy toasted pecan topping -- using about 5-6 potatoes and baking it in a 9x13 dish.

Margaret

I substitute a tablespoon of maple syrup for the sugar in the potatoes. They are still plenty sweet and delicious.

Just did a variation on this recipe. Not wanting to use milk from a can (snob, snob) I substituted it with one part heavy cream and two parts whole milk. I'm sure it gave the dish more body and a richer flavor.

Jen

Too sweet and far too watery. I thought I would up my game with a new recipe, but this was an unexpected flop.

This was a hit at Thanksgiving 2023. Will be a regular potluck contribution for me annually! Thanks!

Sam Shepperd

This was very good and will go into my Thanksgiving recipe file. I added about a teaspoon of orange zest to complement. Don’t skip the topping.

Sharon

Made this in an 9" round casserole dish. I roasted the potatoes longer, about 2 hours -- they were sweet enough that I omitted the brown sugar in the potatoes completely and didn't miss it. Also swapped the cream for unsweetened soy milk and felt fine about that too. A big hit at Thanksgiving!

:)

Added cinnamon and vegan marshmallows on top

Martha M

A big hit with everyone. I reduced the brown sugar in the potatoes by 1/2, used 1 cup pecans

Jeanne

One of my favorite Thanksgiving traditions - love this recipe, love the dish. The only bad part was that I didn't have any leftovers - it went fast!

Robyn

I modified the topping. Added 1/3 c gf flour and 1/2 c oatmeal to pecans butter and sugar. Pinch of salt. My son in law who never liked sweet potato casserole before went wild for it.

Jay

“Bake the potatoes “: Does that mean just throw them in the oven (maybe pricking with) fork? Normally, a baked potato involves coating with an oil, wrapping in foil and then baking. I feel like not wrapping could produce dry potato flesh.

Martha M

I baked them with no coating or pricking and it was easy to peel the skin off, inside was still moist

David

Is there any reason NOT to do the initial baking of the potatoes in a microwave? So quick and doesn't take up oven space on Thanksgiving..

Mamie

Can you substitute walnuts or another nut for pecans? Having a hard time finding pecans the day before Thanksgiving.

Deirdre M.

You think I can get away with a 7"x11" dish? Just reduce everything a little?

CIndy

Yes, this recipe is very flexible!

Chris Semrod

Yummy. Add an ounce of tequila for a wonderfully flavored twist.

FAQs

How do you make a sweet potato casserole not runny? ›

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

Why put egg in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

What's the difference between sweet potato pie and sweet potato casserole? ›

The difference is that sweet potato casserole can either have a toasted marshmallow top or a crunchy brown sugar/nut top and is made with brown sugar in the casserole. Sweet potato pie is made with white sugar, has nothing on top, but can be served with whipped topping.

Why is my sweet potato still hard after baking? ›

If it still feels firm, I'd put it back in the oven for another 15 minutes. Expert tip! Drop your baked sweet potato from about 10 inches above onto a cutting board or the baking pan.

Why is my sweet potato casserole so watery? ›

Why is my sweet potato casserole watery? If you overcook your sweet potatoes, they may begin to absorb too much liquid, making them watery. It's important to cut your potatoes into equal-sized pieces so that they all cook at the same rate. Make sure to remove them from the steamer as soon as they are fork-tender!

How do you make a casserole less runny? ›

Simply whisk equal parts butter and flour together. Then, roll the thick paste into little teaspoon-sized balls. Add one ball to your casserole at a time, waiting about a minute before adding another one, until you get the right thickness.

Can I leave eggs out of sweet potato casserole? ›

Eggs (or not!)

– I've made this sweet potato casserole with and without eggs, both ways are delicious. The eggs act as a binder and gives the casserole a light and fluffy texture. Without eggs, the casserole doesn't have as much structure but it still silky smooth and tastes delicious.

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

How do you thicken a sweet potato casserole? ›

Everything you'll need to make this recipe.

Choose orange sweet potatoes for the best flavor and sweetness. Brown sugar adds a depth of flavor with a hint of molasses and helps create a caramel-like sauce. All-purpose flour will help thicken the sauce and give some structure.

How do you know when sweet potato casserole is done? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

What variety of sweet potato is best for casserole? ›

Jewel. With copper skin and deep-orange flesh that's moist and tender when cooked, the jewel is a go-to potato for traditional baking and casseroles.

When should you not eat sweet potatoes? ›

How to tell if sweet potatoes have gone bad. If your sweet potato is soft in spots, smells rotten, or oozes a mysterious liquid, that potato should be discarded. Another sign that sweet potatoes have taken a turn for the worse is if they start growing stalky purplish sprouts.

What are the black spots on the inside of sweet potatoes? ›

Internal necrosis is a physiological disorder, not caused by a pest or pathogen, where the sweetpotatoes develop black spots and patches on the inside of the root. These black patches are only found in the end of the root closest to where the vine was.

What are the black dots on my sweet potatoes? ›

Sweet potatoes in storage are commonly infected with the bread mold fungus, which causes a watery soft rot of part or all of the tuber. The fungus may be seen as a fluffy, white growth, with black dots supported on threads.

How do you thicken up sweet potato casserole? ›

Choose orange sweet potatoes for the best flavor and sweetness. Brown sugar adds a depth of flavor with a hint of molasses and helps create a caramel-like sauce. All-purpose flour will help thicken the sauce and give some structure.

What do I do if my potato bake is too runny? ›

Try letting the dish rest for 10 minutes or so to let the water get absorbed and let the sauce thicken. Try cooking your recipe longer.

Is sweet potato casserole supposed to be watery? ›

If your sweet potato casserole turned out “watery”, its usually because you forgot to add eggs; you didn't let your casserole have enough time to set up after baking or you used fresh sweet potatoes and didn't boil them long enough before mashing.

Should sweet potato casserole be firm? ›

you should see it firm, but still paste like. Once it bulges and you start to see cracks, it will be overcooked. You don't need anything of those fancy gadgets for casserole! You can grab a potato masher or whisk and mash them up.
