Slow Cooker Lobster Bisque

My husband and I have a running joke that whenever one of us asks “what do you want for dinner?” the other answers “Lobster!” and we laugh it off because we NEVER have lobster. It is usually out of our price range. But this Valentine’s Day I thought “why not” let’s go ahead and splurge a little and so I bought a couple of lobster tails and decided to do a nice Crock-Pot Lobster Bisque recipe.

I have had lobster bisque at our favorite “date night” restaurants and it is SO good. Seriously you just wish they would bring the entire pot out so you can eat it by the gallon. And so that is what I was trying to emulate here with this recipe.

And frankly while this is a soup that is going to impress. It is actually quite easy to make. You start with a base of tomatoes, shallots and other aromatics and let it simmer away. Thenpuree then add the lobster tails and let them cook for just a short time, remove the lobster from the crock-pot and add your cream, chop up your lobster meat and add it back in. And that really is it. You can let the soup base simmer away all day while you are at work and then do the finishing up touches before serving.

Instructions

  • Put minced shallots and garlic in a microwave safe bowl and microwave on high for 2-3 minutes or until the shallots are wilted and starting to turn translucent. (You can also cook them in a small skillet if you don’t have a microwave)

  • Add shallot and garlic mixture to a 4-quart or larger slow cooker.

  • Continue adding tomatoes, chicken broth, old bay seasoning, dill, parsley, pepper & paprika to the slow cooker.

  • With a sharp knife cut off the fan part of the very end of the lobsters and add those to the slow cooker.

  • Stir, cover and cook on LOW for 6 hours or on HIGH for 3 hours.

  • Remove the lobster tail ends and discard.

  • Using a blender or immersion blender puree the soup mixture to your desired chunkiness. (I pureed half until smooth and the other half just a light puree.)

  • Add the soup back into the crock-pot if you used a regular blender.

  • Add your lobster tails to the soup, cover and cook 45 minutes on LOW or until the shells turn red and the lobster meat is cooked.

  • Remove lobster tails from the soup and let cool slightly.

  • While the lobster is cooling add the cream and stir.

  • With a sharp knife cut each lobster tail in half long-ways and remove the lobster flesh from the shells.

  • Discard shells and roughly chop lobster meat and add back into the soup.

  • Serve and enjoy!

Notes

You may substitute half of a mild onion for the shallots if you cannot find shallots. You may also use less cream or substitute half and half for the cream for less fat.

FAQs

Is lobster soup the same as lobster bisque? ›

While lobster bisque is considered to be a type of soup, there are a few differences that set the two appetizers apart. Bisque is far creamier and richer than traditional soup, which consists mostly of broth, veggies and spices.

What makes bisque bisque? ›

What Is Bisque? A bisque is a thick cream soup that chefs purée and strain for a fine, smooth final result. Traditional bisque recipes feature seafood like lobster, crayfish, shrimp, or crab as the main ingredient—chefs typically grind the crustacean shells into a fine paste to thicken the mixture.

Do you grind up the shells for lobster bisque? ›

Traditionally, the shells were ground up and strained to make a lobster stock thickened with rice or beurre manié (a softened butter and flour mixture) and cream. The mixture is then flavored with sherry. The lobster meat was reserved for dishes like lobster thermidor—none were added to the bisque.

Which is usually a main ingredient in bisque? ›

The main ingredient of a bisque is usually a shellfish like lobster, crab, shrimp, or crayfish, but occasionally other ingredients such as tomato, pumpkin or chicken are used.

Why is lobster bisque so good? ›

In American recipes, using a combination of lobster shells, bodies, claw meat, and tail meat provides the bisque its telltale taste and feel. Depending on the recipe, you will remove the lobster from the body, dice it, and add the chopped lobster meat to the broth and develop flavors that way.

How can you add richness to bisque soup? ›

Tomato – A fresh tomato will help add color and flavor to this soup. Tomato Paste – You will need tomato paste to add flavor, color, richness, and body to the bisque.

Why does lobster bisque taste bitter? ›

Why is my lobster bisque bitter? If you used a whole lobster carcass (including head and gills) to make the stock, it's important not to cook it for too long as they tend lend a bitter taste to the stock. Instead remove head and gill parts and use only the shells.

What is the classic thickener for a bisque? ›

Most modern bisques are thickened using rice. Some cook the rice in the broth and strain it out later, using only the left-behind rice starch to thicken the soup. Others puree the rice into the soup to thicken it. Almost all bisques are finished with hot cream for a velvety texture.

What are the two ingredients that make a bisque different from a purée soup? ›

Key Differences
  • Texture: Bisque is known for its smooth and creamy texture, while soup can vary in texture from clear and brothy to thick and chunky.
  • Ingredients: Bisque is often made with seafood and enriched with heavy cream, whereas soup can be made with a wide range of ingredients, offering more versatility.

Measure 1 C of ice and stir it into the sauce: the thermal shock will help release more flavor from the shells and in general. When the ice has melted add the water, the bay leaf and cinnamon.
